Instructions

  1. In a large pot over medium heat, heat the oil. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Add the bell peppers and jalapeño and cook for another 3 minutes.
  3. Stir in the chili powder, cumin, paprika, oregano, garlic powder, onion powder, and black pepper and cook for 1 minute.
  4. Add the black beans, corn, diced tomatoes, tomato sauce, vegetable broth, and salt and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
