The Best Quick and Easy Meals
We all have busy lives, but that doesn’t mean we have to sacrifice flavor and nutrition when it comes to dinner. Here are some of my favorite recipes for quick and easy meals that are sure to please the whole family.
One of my go-to recipes is my Chicken and Rice Bake. It’s simple to make and only requires a few ingredients. You start by preheating the oven to 350 degrees, then coating a 9×13 inch baking dish with cooking spray. Then, spread one cup of uncooked white or brown rice in the baking dish. Top the rice with two cups of cooked, diced chicken, one can of cream of chicken soup, one cup of shredded cheddar cheese, one cup of frozen peas, and one tablespoon of butter. Bake for about 45 minutes, until the cheese is melted and bubbly.
Another favorite is my One-Pot Lasagna. This one is even easier to make, and you don’t have to preheat the oven. All you need is a large skillet or pot. Start by browning one pound of ground beef in the skillet. Once it’s cooked, drain off the fat. Add one jar of your favorite pasta sauce, one can of diced tomatoes, and one cup of water. Let the mixture come to a boil, then add one package of lasagna noodles and reduce the heat to low. Simmer the mixture for about 15 minutes, stirring occasionally, until the noodles are cooked. Then, top the mixture with one cup of shredded mozzarella cheese and let it melt. Serve it with a side salad and you’ve got a delicious and easy meal in no time!
Delicious Desserts
When it comes to desserts, I’m a fan of anything that’s easy to make but still tastes great. Here are some of my favorite recipes for delicious desserts that won’t take too long to make.
My Chocolate Chip Cookie Cake is always a hit. It starts with one package of your favorite chocolate chip cookie mix. Prepare the cookie dough according to the package directions. Grease and flour a 9-inch round cake pan and spread the cookie dough evenly in the pan. Bake for about 20 minutes, until the edges are golden brown. Let the cake cool for about 10 minutes before transferring it to a wire rack to cool completely. Once it’s cool, spread a layer of your favorite chocolate frosting over the top and sprinkle with mini chocolate chips.
Another favorite is my No-Bake Cheesecake. To make this one, you’ll need one package of graham crackers, one stick of butter, one cup of sugar, one package of cream cheese, one teaspoon of vanilla extract, and one cup of heavy cream. First, crush the graham crackers and mix them with the butter and one-fourth cup of sugar. Press the mixture into the bottom of a 9-inch springform pan. Then, beat the cream cheese, three-fourths cup of sugar, and the vanilla extract in a medium bowl until light and fluffy. Beat in the heavy cream until the mixture is smooth. Spread the mixture over the graham cracker crust and refrigerate for at least two hours before serving.
Celebration-Worthy Recipes
Special occasions call for special recipes, and these are some of my favorites for holiday dinners, birthdays, and other special occasions.
I always make my Slow-Cooker Pot Roast for special occasions. To make this, you’ll need a 3-pound chuck roast, one envelope of dry onion soup mix, one can of cream of mushroom soup, one package of baby carrots, and one large onion, cut into chunks. Place the roast in your slow cooker and top with the soup mix, mushroom soup, carrots, and onion. Cook on low for 8 to 10 hours. Serve with mashed potatoes or your favorite sides for a delicious and easy meal.
My Peanut Butter Pie is perfect for birthdays and other celebrations. To make this one, you’ll need one package of graham crackers, one stick of butter, one cup of powdered sugar, one cup of peanut butter, one can of sweetened condensed milk, and one teaspoon of vanilla extract. Preheat the oven to 350 degrees and grease a 9-inch pie pan. In a medium bowl, combine the graham crackers, butter, and powdered sugar and mix until crumbly. Press the mixture into the bottom and sides of the pie pan. Bake for 10 minutes, then let cool. In a large bowl, beat the peanut butter, sweetened condensed milk, and vanilla until smooth. Pour the mixture into the cooled pie shell and refrigerate for at least two hours before serving.
